Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add taco seasoning and water to the beef, and stir to combine. Cook until thickened.
Layering & Baking
- In a baking dish, layer a tortilla, followed by refried beans, seasoned beef, enchilada sauce, cheese, and diced tomatoes.
- Repeat the layers, finishing with cheese on top.
- Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with green onions, and let cool for a few minutes before slicing and serving.
Notes
Serve slices warm with toppings like sour cream, avocado, jalapeños, shredded lettuce, and salsa. Refrigerate leftovers and reheat in the oven or skillet.
