Meat & Beans
  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 packet taco seasoning Check for gluten-free options if needed.
  • 2/3 cup water Needed to combine with taco seasoning.
  • Refried beans refried beans Can use vegetarian refried beans for a meatless option.
Tortillas & Sauce
  • 8 small flour or corn tortillas Corn tortillas can be used for gluten-free.
  • 1 cup enchilada sauce Avoid over-saucing to prevent sogginess.
Cheese & Toppings
  • 2 cups cheese (cheddar and Monterey Jack mix) Pre-shredded cheese works best for melting.
  • 2 fresh tomatoes, diced Adds freshness and brightness.
  • 3 green onions, garnished Chopped for garnish before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add taco seasoning and water to the beef, and stir to combine. Cook until thickened.
Layering & Baking
  1. In a baking dish, layer a tortilla, followed by refried beans, seasoned beef, enchilada sauce, cheese, and diced tomatoes.
  2. Repeat the layers, finishing with cheese on top.
  3. Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
  4. Remove from the oven, garnish with green onions, and let cool for a few minutes before slicing and serving.

Notes

Serve slices warm with toppings like sour cream, avocado, jalapeños, shredded lettuce, and salsa. Refrigerate leftovers and reheat in the oven or skillet.
