Preparation
- Preheat the oven to 350°F (175°C) and grease a shallow 9-inch baking dish or small cast-iron skillet.
- In a mixing bowl, beat the softened cream cheese until smooth and airy. Stir in the sour cream until creamy.
- Add the ranch seasoning, shredded cheddar, and half the mozzarella. Fold until evenly combined.
- Transfer to the prepared baking dish, smoothing the top with a spatula.
- Sprinkle the remaining mozzarella over the top, then scatter the crumbled bacon and sliced green onions.
- Press the crushed crackers or panko onto the surface and dust with smoked paprika.
Baking
- Bake for 15 to 20 minutes, until bubbling at the edges and golden brown on top.
- Let the dip rest for 5 minutes before serving.
Notes
For a vegetarian version, replace bacon with smoked tempeh or mushrooms. Use GF crackers or crushed nuts for a gluten-free version.
