Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the pumpkin, sugar, and oil until well combined.
  3. Add the eggs one at a time, stirring well after each addition.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. Be careful not to overmix.
  6. Pour the batter into a greased loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
