Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together the grated zucchini, applesauce, oil, sugar, eggs, and vanilla extract until well combined.
- In another bowl, mix the flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to over-mix; a few lumps are okay.
- If desired, fold in nuts or dried fruits for added texture.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Cooking
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store any leftovers in an airtight container at room temperature for up to three days, or in the fridge for about a week. This zucchini bread also freezes beautifully. Reheat by microwaving slices for a few seconds or warming them in a toaster oven.
