For the Breakfast Casserole
  • 1 pound breakfast sausage can be swapped for turkey sausage for a healthier option
  • 6 large eggs
  • 1 cup milk almond milk works as a dairy-free alternative
  • 1 cup shredded cheese cheddar or a blend of your favorite cheeses
  • 2 cups frozen hash browns or fresh diced potatoes for a homemade feel
  • 1 bell pepper, diced colorful variations can add a festive flair
  • 1 onion, diced
  • Salt and pepper to taste

Method
 

Preparation
  1. In a skillet over medium heat, brown the sausage until fully cooked. Drain excess fat if needed.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Add in the cooked sausage, hash browns, cheese, bell pepper, and onion. Stir until well combined.
  3. Spray the interior of your crock pot with non-stick cooking spray. Pour the mixture into the pot, spreading it evenly.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the eggs are set and the edges are slightly golden.
  2. Once done, serve the casserole piping hot, garnished with fresh herbs if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze portions in individual containers.
