Preparation
- In a skillet over medium heat, brown the sausage until fully cooked. Drain excess fat if needed.
- In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Add in the cooked sausage, hash browns, cheese, bell pepper, and onion. Stir until well combined.
- Spray the interior of your crock pot with non-stick cooking spray. Pour the mixture into the pot, spreading it evenly.
Cooking
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the eggs are set and the edges are slightly golden.
- Once done, serve the casserole piping hot, garnished with fresh herbs if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. For longer storage, freeze portions in individual containers.
