Preparation
- In a saucepan over medium heat, combine granulated sugar, brown sugar, evaporated milk (or heavy cream), and butter.
- Stir constantly until the mixture comes to a boil.
- Allow to boil for about 5 minutes without stirring, until it reaches a soft ball stage (238°F to 240°F).
- Remove from heat and let it cool slightly.
- Beat the mixture until it thickens and becomes creamy.
- Stir in toasted pecans.
- Drop spoonfuls onto parchment paper and let cool completely.
Notes
Serve pralines at room temperature, optionally wrapped in wax paper for gifts. Store in an airtight container for up to 5-7 days. Helps to bring them back to room temperature before serving after refrigeration.
