Ingredients

  • 1.5 cups granulated sugar
  • 0.75 cups packed light brown sugar
  • 0.5 cups evaporated milk or heavy cream
  • 6 tbsp unsalted butter
Additional Ingredients
  • 1-1.5 cups toasted pecans
  • 1 tsp vanilla extract (optional) For extra creaminess
  • 1 pinch salt (optional) To balance sweetness

Method
 

Preparation
  1. In a saucepan over medium heat, combine granulated sugar, brown sugar, evaporated milk (or heavy cream), and butter.
  2. Stir constantly until the mixture comes to a boil.
  3. Allow to boil for about 5 minutes without stirring, until it reaches a soft ball stage (238°F to 240°F).
  4. Remove from heat and let it cool slightly.
  5. Beat the mixture until it thickens and becomes creamy.
  6. Stir in toasted pecans.
  7. Drop spoonfuls onto parchment paper and let cool completely.

Notes

Serve pralines at room temperature, optionally wrapped in wax paper for gifts. Store in an airtight container for up to 5-7 days. Helps to bring them back to room temperature before serving after refrigeration.
