  • 1 cup pumpkin puree (not pumpkin pie filling) Canned pumpkin works well.
  • ½ cup powdered sugar Adjust sweetness to taste.
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice Or a mix of cinnamon, nutmeg, and ginger.
  • 1 cup graham cracker crumbs Use gluten-free crumbs if needed.
  • ½ cup crushed nuts Optional, for added crunch.
  • Chocolate or white chocolate for coating Optional.

Preparation
  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Stir in the pumpkin puree, powdered sugar, vanilla extract, and pumpkin spice until fully combined.
  3. Gradually add the graham cracker crumbs to the mixture, stirring until evenly distributed.
  4. Scoop out tablespoons of the mixture and roll them into small balls.
  5. Place them on a parchment-lined baking sheet.
  6. Refrigerate for at least 1 hour to help the balls firm up.
  7. If desired, melt chocolate or white chocolate and dip each ball for added indulgence.
  8. Allow the chocolate to set before serving.

Notes

Store in an airtight container in the refrigerator for up to one week. Can be frozen for up to three months.
