Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 4 tablespoons unsalted butter, melted
For the filling
  • 8 oz cream cheese, softened Soften cream cheese to room temperature for a perfectly smooth filling.
  • 1/3 cup powdered sugar Sweetness can be adjusted if using very ripe strawberries.
For topping
  • to taste fresh strawberries Add just before serving for best texture.

Preparation
  1. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined.
  2. Press the graham cracker mixture into the bottom of small bite-sized molds or a baking dish to form the crust.
  3. In another bowl, beat the softened cream cheese and powdered sugar until smooth and creamy.
  4. Spoon the cream cheese mixture over the crust in each mold.
  5. Chill in the refrigerator for at least 2 hours or until set.
  6. Once set, remove from molds, top with fresh strawberries, and serve.

Notes

Serve chilled on a platter or individual dessert plates. Garnish with sliced strawberries, a small mint leaf, or a light dusting of powdered sugar. For a crunchy contrast, sprinkle a few extra graham cracker crumbs or crushed toasted nuts on top just before serving. Store in an airtight container in the refrigerator for up to 3 days.
