Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper for easy removal.
- In a bowl, whisk together the flour, baking soda, salt, and cinnamon until evenly combined.
Mixing
- In a large mixing bowl, cream the softened butter and sugar until pale and slightly fluffy, about 2–3 minutes.
- Beat in the eggs one at a time, then add the vanilla. Scrape the bowl to keep the mixture smooth.
- Stir in the mashed bananas and sour cream until combined.
- Fold in the dry ingredients just until no streaks of flour remain, being careful not to overmix.
- Gently fold in the nuts or chocolate chips if using.
Baking
- Pour the batter into the prepared pan, smoothing the top. If desired, sprinkle a few extra nuts on top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool in the pan for 10 minutes, then lift out by the parchment and cool completely on a wire rack before slicing.
Notes
For an indulgent dessert, add 1/2 cup chocolate chips; for a festive treat, fold in 1/4 cup dried cranberries and orange peel.
