  • 1/4 cup Honey Substitute maple syrup for a vegan-friendly option.
  • 1/4 cup Soy sauce Choose low-sodium for a healthier take.
  • 2 tablespoons Olive oil For sautéing.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced kielbasa, bell peppers, red onions, and carrots.
  3. In a separate bowl, whisk together the minced garlic, honey, soy sauce, olive oil, salt, and pepper until well combined.
  4. Pour the honey garlic mixture over the sausage and vegetables, tossing to coat everything evenly.
  5. Spread the mixture evenly on a lined baking sheet.
Cooking
  1. Roast in the oven for 25 minutes, stirring halfway through, until the vegetables are tender and the sausage is nicely caramelized.

Notes

This dish can be stored in an airtight container in the refrigerator for up to 3 days. When ready to reheat, warm in the oven or microwave, adding a splash of water or broth to keep it moist.
