  • 1 pound Italian sausage (mild or spicy)
  • 1 pound gnocchi (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach (or kale) Kale can be used for a stronger flavor.
  • 1 tablespoon garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ cup chicken or vegetable broth
  • Olive oil, for sautéing
  • Salt and pepper, to taste
  • Grated parmesan cheese, for serving

Method
 

Cooking the Sausage
  1. In a large skillet over medium heat, add a drizzle of olive oil and the Italian sausage. Break it apart with a wooden spoon, cooking until browned and cooked through, about 6-8 minutes.
Adding Garlic and Seasoning
  1. Once the sausage is cooked, stir in the minced garlic and Italian seasoning. Cook for another minute until fragrant, ensuring the garlic doesn’t burn.
Incorporating Tomatoes
  1. Add halved cherry tomatoes to the pan, and let them simmer for 3-4 minutes until they start to soften and release their juices.
Mixing in Gnocchi
  1. Stir in the gnocchi and pour in the chicken or vegetable broth. Gently mix to combine, ensuring all the gnocchi are coated in the sauce.
Adding Spinach
  1. Fold in the fresh spinach and cook for an additional 2-3 minutes until the spinach wilts. Taste and adjust the seasoning with salt and pepper.
Serving the Dish
  1. Remove from heat, and top with grated parmesan cheese before serving.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat in a pan with a splash of water or broth. Use frozen gnocchi for a shortcut and do not overcook it.
