  • 1 pound baby potatoes, halved Red or yellow potatoes work equally well
  • 12 ounces green beans, trimmed Fresh or frozen can be used
Seasonings and Oil
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to ensure a crispy finish.
  2. Slice the smoked sausage, halve the potatoes, and trim the green beans.
Cooking
  1. Spread out the sausage, potatoes, and green beans in a large baking sheet.
  2. Drizzle olive oil over the mixture and sprinkle with garlic powder, onion powder, and Italian herbs. Season with salt and pepper to taste.
  3. Toss everything together to ensure the flavors are evenly distributed.
  4. Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the sausage is browned and the potatoes are fork-tender.
  5. Remove from the oven and let it cool for a few minutes before serving hot.

Notes

Feel free to swap the green beans for broccoli or asparagus, or add bell peppers or cherry tomatoes. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
