  • 1 pound sausage (your choice: chicken, pork, or plant-based)
  • 2 cups fresh green beans, trimmed
  • 4 medium potatoes, diced (you can substitute with sweet potatoes)
Seasoning and Oil
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper. Toss until well coated.
Cooking
  1. Spread the seasoned potatoes out on a large baking sheet in a single layer. Bake for 15 minutes.
  2. After 15 minutes, remove the baking sheet from the oven. Nestle the sausages among the potatoes, and return it to the oven for another 10 minutes.
  3. Remove the baking sheet, add the green beans, season them lightly with olive oil, salt, and pepper, and toss everything together gently.
  4. Bake for another 15-20 minutes, until the sausages are browned and cooked through, and the potatoes are tender and slightly crispy.
Serving
  1. Let the dish cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet on medium heat or in the microwave. For longer storage, freeze in individual portions.
