One Pot Creamy Cajun Sausage Pasta

  • 1 pack cajun andouille sausage (cut into coins) (13oz)
  • 1 tbsp chopped garlic
  • 1 can chicken broth (14.5oz, about 2 cups)
  • ½ cup heavy cream
  • 1 can Rotel diced tomatoes and chilies (10oz)
  • 8 ounces dry bowtie pasta (½ pound or approximately 2 cups)
  • 2 cups shredded cheddar cheese
  • 1 tsp cajun seasoning *see notes

Method
 

Cooking
  1. In a large skillet, cook the sausage over medium heat for about 5 minutes or until browned.
  2. Remove the sausage from the pan and set aside on a paper towel lined plate, keeping the sausage grease in the pan.
  3. Sauté the garlic in the leftover sausage grease for about a minute.
  4. Add the chicken broth, diced tomatoes, heavy cream, and cajun seasoning to the skillet, stir well.
  5. Stir in the dry bowtie pasta, cover, and simmer on low for about 14 minutes or until pasta is fully cooked.
  6. Toss in the cooked sausage and shredded cheddar cheese. Stir to combine and melt the cheese.

Notes

Serve with chopped parsley or sliced green onions and extra cheddar. For best results, use a heavy skillet and don’t discard the sausage grease for additional flavor. Adjust spice levels by modifying the amount of Rotel or Cajun seasoning.
