  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups vegetable broth (or chicken broth)
  • 1 package (9 oz) cheese tortellini
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1 cup spinach, chopped (or kale) Kale can be used for a stronger flavor.
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent and fragrant, about 5 minutes.
Cooking
  1. Pour in the vegetable broth and the diced tomatoes with their juices. Stir until well combined and bring to a simmer.
  2. Add the cheese tortellini to the pot and cook according to package instructions, usually around 5-7 minutes, until al dente.
  3. Reduce the heat, stir in the heavy cream, chopped spinach, and grated Parmesan. Season with salt and pepper to taste.
  4. Cook for another 2-3 minutes until the cream heats through and the spinach wilts.
  5. Serve hot, garnished with fresh basil.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat by warming in a pot over low heat, adding a splash of broth or cream if necessary.
