Ingredients
  

Wet Ingredients
  • 1 cup grated zucchini (about 1 medium zucchini) Squeeze out excess moisture before adding.
  • 1 cup whole wheat flour Can substitute with spelt or oat flour.
  • 1/2 cup honey Maple syrup can be used as a vegan alternative.
  • 1/2 cup unsweetened applesauce Bring to room temperature for better mixing.
  • 2 large eggs Bring to room temperature for fluffier texture.
  • 1/2 cup orange juice Freshly squeezed for best flavor.
  • 1 unit zest of one orange Use a microplane for fine zest.
Dry Ingredients
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: walnuts or chocolate chips Add for texture if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together honey, applesauce, eggs, orange juice, and orange zest until well combined.
  3. Fold in the grated zucchini gently.
  4. In a separate bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not over-mix.
Baking
  1. Pour the batter into a greased loaf pan and smooth the top.
  2. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

To keep the bread fresh, wrap it tightly in plastic or store in an airtight container. For longer storage, freeze individual slices between parchment paper.
