  • 1 pound breakfast sausage Feel free to swap with turkey sausage for a lighter option.
  • 6 large eggs
  • 2 cups milk Almond milk can be a great substitute for a dairy-free version.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slices bread, cubed Stale bread works perfectly here.
  • 2 cups shredded cheese Cheddar or a blend.
  • 1 cup chopped bell peppers Mix colors for a vibrant look.
  • 1/2 cup chopped onion

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the breakfast sausage over medium heat, breaking it into crumbles. Once fully cooked, drain any excess fat.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
  4. In a greased baking dish, layer half of the cubed bread on the bottom, followed by half of the cooked sausage, bell peppers, onions, and cheese.
  5. Repeat the layering with the remaining bread, sausage, vegetables, and cheese.
  6. Pour the egg mixture over the top, ensuring all the bread is soaked. Press down gently to help it absorb.
  7. Cover with plastic wrap and refrigerate overnight to let the flavors meld.
Baking
  1. In the morning, uncover and bake for 45-50 minutes, or until the casserole is set and lightly golden on top.
  2. Allow it to cool slightly before slicing and serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For reheating, cover with foil and bake in a preheated oven at 350°F until warmed through. You can also freeze individual portions; simply thaw overnight in the fridge before reheating. Don't rush the soaking for the best flavor and texture.
