Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the breakfast sausage over medium heat, breaking it into crumbles. Once fully cooked, drain any excess fat.
- In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
- In a greased baking dish, layer half of the cubed bread on the bottom, followed by half of the cooked sausage, bell peppers, onions, and cheese.
- Repeat the layering with the remaining bread, sausage, vegetables, and cheese.
- Pour the egg mixture over the top, ensuring all the bread is soaked. Press down gently to help it absorb.
- Cover with plastic wrap and refrigerate overnight to let the flavors meld.
Baking
- In the morning, uncover and bake for 45-50 minutes, or until the casserole is set and lightly golden on top.
- Allow it to cool slightly before slicing and serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For reheating, cover with foil and bake in a preheated oven at 350°F until warmed through. You can also freeze individual portions; simply thaw overnight in the fridge before reheating. Don't rush the soaking for the best flavor and texture.
