  • 1 loaf loaf of bread, preferably a day or two old For better texture
  • 8 large eggs large eggs, beaten Beaten before adding to the mixture
  • 2 cups milk
  • 1 cup shredded cheese Cheddar or any cheese of your choice
  • 1 pound cooked breakfast sausage or bacon Can swap for vegetables for a vegetarian option
  • Salt and pepper To taste
  • Optional: chopped herbs for garnish Or a dash of hot sauce for a spicy kick

Preparation
  1. Begin by greasing a 9x13 inch baking dish.
  2. Tear the bread into bite-sized pieces and spread them evenly in the dish.
  3. In a separate bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  4. Pour the egg mixture over the bread pieces, ensuring everything is soaked well.
  5. Add in the cooked sausage or bacon, and sprinkle the cheese evenly over the top.
  6. Cover the dish with plastic wrap or foil, and refrigerate overnight to let the flavors meld.
  7. The next morning, preheat your oven to 350°F (175°C).
  8. Remove the casserole from the fridge and let it sit at room temperature for 15 minutes.
  9. Bake uncovered for about 45 minutes, or until the top is golden brown and the casserole is set.
  10. Let it cool slightly before serving. Enjoy the amazing aroma filling your kitchen!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat individual portions in the microwave or warm the entire dish in the oven at 350°F (175°C) until heated through. If you want to freeze your casserole, do so before baking.
