  • 1 pound breakfast sausage (or your preferred protein)
  • 6 large eggs
  • 2 cups milk (or a dairy-free alternative)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slices bread, cubed (day-old works great)
  • 2 cups shredded cheese (cheddar is a classic choice)
  • 1 cup chopped vegetables (peppers, onion, or spinach for added flavor)

Method
 

Preparation
  1. In a skillet over medium heat, cook the breakfast sausage until it’s browned and cooked through. Drain any excess fat and set aside to cool.
  2. In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well combined.
  3. Fold in the cooked sausage, cubed bread, chopped vegetables, and cheese into the egg mixture until everything is coated.
  4. Lightly grease the slow cooker with cooking spray. Pour in the mixture, spreading it evenly.
Cooking
  1. Cover and cook on low for 8 hours or on high for 4 hours, until the eggs are set and firm.
Serving
  1. Once it’s done, allow it to cool for a few minutes before cutting into squares. Garnish with fresh herbs if desired!

Notes

This casserole is versatile and can be customized with different ingredients. Store leftovers in an airtight container for up to 3 days or freeze individual portions.
