Ingredients
  

For the salmon
  • 4 pieces salmon fillets (skin-on for added texture)
  • 2 tablespoons olive oil For searing
  • 2 tablespoons butter Add flavor during cooking
  • 2 cloves garlic (minced)
  • 1 large lemon (zested and juiced) For flavoring
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)
For the orzo
  • 1 cup orzo pasta Feel free to swap with whole wheat pasta

Method
 

Preparation of Orzo
  1. Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions, usually about 8-10 minutes. Drain and set aside.
Searing the Salmon
  1. In a large skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper.
  2. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes, until the skin is crispy and golden brown.
Finishing the Salmon
  1. Flip the salmon and add butter, minced garlic, and lemon juice to the skillet. Cook for another 3-4 minutes, spooning the melted butter over the salmon as it cooks.
Combining with Orzo
  1. Add the cooked orzo to the skillet with the salmon. Toss gently to combine with the remaining juice and flavors. If desired, add lemon zest for added flavor.
Serving
  1. Plate the orzo and top with salmon. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm gently in the microwave or stovetop, adding a splash of water if necessary.
