Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the sliced peaches with 1/2 cup of sugar. Toss to coat and let sit for about 10 minutes.
- In another bowl, whisk together the flour, baking powder, salt, and remaining sugar (1/2 cup).
- Stir in the milk, melted butter, and vanilla extract until combined; the batter might be lumpy, but that’s okay!
- Pour the batter into a greased 9x13-inch baking dish without stirring.
- Spoon the peaches along with their juices over the batter. Again, do not stir.
- If desired, sprinkle a little cinnamon on top for an extra layer of flavor.
Baking
- Bake for 45 minutes or until golden brown and bubbly.
Notes
This recipe is great for a make-ahead dessert; you can prepare it in advance and bake just before serving. Store any leftovers covered in the refrigerator for up to 3 days. To reheat, simply pop it in the oven at 350°F (175°C) for about 15-20 minutes.
