Ingredients
  

Fruit Filling
  • 4 cups fresh peaches, sliced (or use frozen if necessary) Make sure to use ripe, juicy peaches for the best flavor.
  • 1 cup sugar, divided Use half for the filling and half for the batter.
  • 1 tsp cinnamon Add a pinch of nutmeg for variation.
Batter
  • 1 cup all-purpose flour Can substitute with whole wheat flour.
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup milk
  • 0.5 cup unsalted butter, melted
  • 1 tsp vanilla extract Can substitute with almond extract.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches with ½ cup of sugar and cinnamon. Set aside to allow the juices to meld.
  3. In another bowl, mix together the flour, remaining sugar, baking powder, and salt.
  4. Gradually whisk in the milk until smooth. Fold in the melted butter and vanilla extract.
Assembly and Baking
  1. Pour the batter into a greased 9x13-inch baking dish.
  2. Spoon the peach mixture evenly over the batter; do not stir. The peaches will float to the top as it bakes.
  3. Bake for 30-40 minutes, or until the top is golden brown and the edges are bubbling.
  4. Let it cool slightly before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place in the oven at 350°F for about 15 minutes or microwave individual servings for 30-60 seconds.
