Peach Filling
  • 4 cups Fresh Peaches, sliced Can substitute with frozen peaches if fresh aren't in season.
  • 1 cup Sugar, divided Use brown sugar for a caramel-like flavor.
Batter Ingredients
  • 1 cup Flour Whole wheat flour can be used for a healthier option.
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Milk Can use almond or non-dairy milk.
  • 1/2 cup Butter, melted Coconut oil can be used for a dairy-free option.
  • 1 teaspoon Cinnamon Add more if desired.
  • 1/2 teaspoon Nutmeg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. In a bowl, toss the sliced peaches with half of the sugar (1/2 cup) and let them sit for about 10 minutes to draw out their juices.
Batter Making
  1. In another bowl, mix the flour, remaining sugar, baking powder, salt, and spices together.
  2. Gradually add the milk and melted butter, stirring until just combined.
Assembly and Baking
  1. Pour the batter into the greased baking dish. Then, layer the sugared peaches over the batter without stirring.
  2. Place in the oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick comes out clean.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
