Dry Ingredients
  • 2 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup peanut butter Natural peanut butter recommended for richer flavor.
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In another bowl, cream the softened butter, peanut butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually mix the dry ingredients into the peanut butter mixture until well combined.
Baking
  1. Drop spoonfuls of dough onto a lined baking sheet, leaving some space between each cookie.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container for up to a week. For longer storage, freeze for up to three months. Consider serving with milk or ice cream.
