  • 4 large large flour tortillas Soft and pliable for easy folding.
  • 2 cups shredded mozzarella cheese For that gooey, melty goodness.
  • 1 cup sliced pepperoni The star of the show, adding a lovely spice.
  • 1/2 cup pizza sauce For dipping or spreading, rich with flavor.
  • 1 tablespoon olive oil For grilling to crisp up those tortillas perfectly.

Preparation
  1. Gather tortillas, cheese, pepperoni, and sauce. Preheat a large skillet over medium heat.
Assembly
  1. On half of each tortilla, layer 1/2 cup of mozzarella cheese, a few slices of pepperoni, and a sprinkle of any additional toppings you desire. Fold the tortillas in half to create a pocket.
Cooking
  1. Add 1 tablespoon of olive oil to the skillet. Once it’s hot, carefully place one or two folded tortillas in the pan. Cook for about 3-4 minutes until golden brown and crispy, then flip to the other side.
  2. Continue cooking for another 3-4 minutes, pressing down gently with a spatula to ensure the cheese melts beautifully.
Serving
  1. Remove the pizzadillas from the skillet and cut them into wedges. Serve with warm pizza sauce for dipping.

Notes

To store leftovers, let them cool completely, then place them in an airtight container for up to 3 days. Reheat in a skillet to maintain crispness. Experiment with flavors by adding toppings you love.
