Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
Mixing
- In a large bowl, whisk the melted butter and sugar until glossy. Add the eggs one at a time, whisking until combined, then stir in the vanilla and mashed bananas.
- Fold the dry mixture into the wet mixture with a spatula until just combined.
- Fold in the nuts or chocolate chips, and orange zest if using.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the bread to cool in the pan for 10 minutes, then lift it out and cool completely on a wire rack.
Notes
For gluten-free, use a 1-to-1 gluten-free flour blend and add an extra egg. For lower sugar, halve the sugar and add 2 tablespoons of applesauce.
