  • 1 cup fresh pineapple, chopped Canned pineapple can be used for convenience.
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
For Assembling Tacos
  • 8 small corn or flour tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Method
 

Preparation
  1. In a mixing bowl, combine the diced chicken with chili powder, cumin, salt, and pepper, ensuring the chicken is well-coated.
  2. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken.
Cooking
  1. Sauté the chicken for about 5-7 minutes until it turns golden brown and is cooked through.
  2. Toss in the chopped pineapple and stir. Let it cook for another 2-3 minutes.
Assembling Tacos
  1. While the chicken and pineapple are finishing up, warm the tortillas in a separate skillet or directly over a flame.
  2. Spoon the chicken and pineapple mixture onto each tortilla.
  3. Garnish with fresh cilantro and serve with lime wedges.

Notes

Feel free to swap chicken for shrimp or tofu. Adding jalapeño can enhance the heat. For storage, keep in an airtight container; reheats well in a skillet. Can also be frozen for quick dinners.
