  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup vegetable oil or substitute with applesauce for a healthier option
  • 4 large eggs
  • 2 cups canned pumpkin puree not pumpkin pie filling
  • 2 cups all-purpose flour or substitute with gluten-free flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts or chocolate chips optional for added texture

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Then add the pumpkin puree and vanilla extract.
  4. In a separate bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  6. If desired, fold in the nuts or chocolate chips for added flavor.
  7. Pour the batter into the prepared baking dish and spread it evenly.
Baking
  1. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the bars to cool in the pan for at least 10 minutes before transferring to a wire rack to cool completely.

Notes

Store any leftovers in an airtight container at room temperature for up to 3 days. For longer storage, freeze the bars for up to 2 months. Wrap tightly in plastic wrap and place in an airtight freezer bag. Thaw overnight in the refrigerator before warming up.
