Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the canned pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Mix until smooth.
- Add the eggs one at a time, ensuring each is well incorporated.
- In another bowl, whisk together the flour, baking powder, baking soda, pumpkin spice, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix!
- In a separate bowl, beat the softened cream cheese until creamy. If you are adding nuts or chocolate chips, mix them in now.
Baking
- Carefully pour half of the batter into the prepared loaf pan, then dollop the cream cheese mixture on top, followed by the remaining batter.
- Using a knife, gently swirl the batter to create beautiful marbling.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, ensure cream cheese and eggs are at room temperature. Store leftovers wrapped tightly, at room temperature for up to 3 days or freeze for up to 3 months. Mix until just combined to avoid a dense loaf.
