  • 1/2 cup vegetable oil
  • 1 cup sugar (or brown sugar for a deeper flavor)
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
For the Cream Cheese Frosting
  • 4 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, whisk together the pumpkin puree, vegetable oil, and sugar until smooth.
  3. Add the eggs one at a time, mixing well to combine.
  4. In a separate bowl, sift together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  2. Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
Frosting
  1. Whip up the cream cheese frosting by beating together the softened cream cheese and butter until creamy.
  2. Gradually add the powdered sugar and vanilla extract.
Serving
  1. Once the bread has cooled completely, generously spread the cream cheese frosting over the top.
