  • 1/4 tsp salt
For the Snickerdoodle Topping
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 2 tbsp butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix together the pumpkin puree, vegetable oil, and sugar until well combined.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. In a small bowl, combine the sugar and cinnamon for the topping, then drizzle the melted butter over the top until well coated.
  8. Sprinkle the snickerdoodle mixture evenly over the batter in the pan.
Baking
  1. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow cooling for 10 minutes in the pan before transferring to a wire rack.
