Ingredients
  

For the Crust
  • 1.5 cups graham cracker crumbs You can also use ginger snaps for a spicier flavor!
  • 0.5 cups unsalted butter, melted
  • 0.25 cups sugar
For the Filling
  • 4 packages (8 oz) cream cheese, softened
  • 1.5 cups sugar
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press this mixture into the bottom of a 9-inch springform pan.
  3. Bake for 10 minutes, then set aside to cool.
Filling
  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Gradually add the sugar and continue mixing until well incorporated.
  3. Mix in the pumpkin puree, followed by the eggs one at a time.
  4. Finally, stir in the vanilla extract, cinnamon, nutmeg, ginger, and salt.
Baking
  1. Pour the filling over the cooled crust and bake in the preheated oven for 60 minutes.
  2. Once baked, turn off the oven and crack the door open, allowing the cheesecake to cool gradually.
  3. Once it reaches room temperature, refrigerate for at least 4 hours, preferably overnight.

Notes

Feel free to get creative with toppings like whipped cream or candied pecans. Cheesecake can also be frozen for up to 2 months.
