  • 2 large eggs They help bind the ingredients together.
  • 1 tsp vanilla extract Enhances overall flavor.
Dry Ingredients
  • 2 cups all-purpose flour All-purpose flour provides structure; whole wheat can be used.
  • 1 tsp baking soda Gives the muffins a lovely rise.
  • 1/2 tsp baking powder Helps ensure a light and fluffy texture.
  • 1/2 tsp salt Balances the sweetness.
  • 1 tsp cinnamon A warm spice that complements pumpkin.
  • 1/2 tsp nutmeg Feel free to use freshly grated for more intensity.
  • 1/4 tsp cloves Optional for an extra layer of fall flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease it generously.
  2. In a large bowl, whisk together the pumpkin puree, vegetable oil, brown sugar, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; be careful not to overmix.
  5. Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full.
  6. Place in the oven and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Once baked, let them cool in the pan for a few minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to three days. Freeze for up to three months. Microwave for 15-20 seconds to reheat.
