Main ingredients
  • 8 pieces tortillas Use warm tortillas to prevent cracking when rolling.
  • 2 cups cooked chicken Shredded, use leftover rotisserie or quickly poached chicken.
  • 2 cups enchilada sauce For extra flavor, mix some with the chicken.
  • 2 cups cheese Shredded, for topping and filling.
  • 1 can black beans Drain and rinse to reduce sodium.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a tortilla, add cooked chicken, black beans, and cheese. Roll it up and place it in a baking dish.
  3. Pour enchilada sauce over the rolled tortillas.
  4. Sprinkle additional cheese on top.
Baking
  1. Bake for 20 minutes until heated through and cheese is bubbly.
  2. Serve hot.

Notes

For best texture, assemble and freeze before baking. Add fresh garnishes like chopped cilantro, diced avocado, or a dollop of sour cream when serving.
