Ingredients
  

Protein
  • 2 pieces Chicken breasts or salmon fillets (or tofu for a vegetarian option) Use your preferred protein.
Vegetables
  • 1 cup Bell peppers, chopped Feel free to swap with broccoli if preferred.
  • 1 cup Zucchini, chopped Feel free to swap with broccoli if preferred.
Grains
  • 1 cup Quick-cooking rice or couscous Measure according to package instructions.
Seasonings
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 tablespoon Herbs (like basil or thyme) Fresh herbs preferred.
Sauce
  • 1/4 cup Teriyaki sauce or homemade vinaigrette For drizzling.
Optional Toppers
  • 1 whole Avocado, sliced For garnish.
  • 1 tablespoon Sesame seeds For garnish.

Method
 

Preparation
  1. Chop your vegetables into bite-sized pieces and dice your protein of choice.
  2. If using rice or couscous, measure it out according to the package instructions.
Cooking
  1. In a medium skillet, heat a drizzle of olive oil over medium heat.
  2. Add the chicken or salmon, seasoning it with salt and pepper. Cook for about 5-7 minutes on each side until thoroughly cooked.
  3. Once your protein is cooked, toss in the chopped vegetables and minced garlic.
  4. Stir continuously until the vegetables are tender-crisp.
  5. Mix in your pre-cooked rice or couscous and drizzle with teriyaki sauce, stirring well until the flavors meld together.
Serving
  1. Plate your creations and top with optional garnishes like avocado or sesame seeds.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. To reheat, simply warm in a skillet with a splash of water to maintain moisture. Prep ahead by chopping vegetables and marinating protein in advance.
