Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, cocoa powder, baking powder, and salt.
- In a separate bowl, whisk together the sugar, vegetable oil, eggs, vanilla extract, and red food coloring until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
Baking
- Scoop tablespoons of dough and roll them into balls, then roll each ball in powdered sugar.
- Place the balls on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are set.
- Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
These cookies are lovely when served warm or at room temperature. They can be stored in an airtight container for up to 3 days, or refrigerated for up to 1 week. To freeze, flash-freeze the baked cookies and store them in a freezer-safe container for up to 3 months.
