  • 2 tablespoons 2 tablespoons olive oil – A good-quality extra virgin olive oil elevates the flavors significantly. Use high-quality extra virgin for best taste
  • 1 tablespoon 1 tablespoon balsamic vinegar – To add a touch of acidity. A dash of lemon juice works, too! Substitute lemon juice if desired
  • to taste Salt and pepper – Essential for seasoning, but feel free to add fresh herbs like basil or thyme for more depth. Add fresh herbs for extra flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the cherry tomatoes with olive oil, balsamic vinegar, salt, and pepper. Spread them out evenly and roast for 20 minutes, or until they’re sweet and blistered.
  3. While the tomatoes roast, lay your sliced baguette on another baking sheet. Drizzle or brush with olive oil and sprinkle with salt. Toast in the oven for 5-7 minutes until golden brown and crisp.
Assembly
  1. Once the bread is ready and the tomatoes are bursting with flavor, spread a generous layer of ricotta cheese on each crostini, followed by spoonfuls of roasted tomatoes.
  2. Finish by tearing fresh basil and scattering it over the crostini. The dish is now ready to be savored!

Notes

Feel free to get creative! Add crumbled bacon, spice it up with red pepper flakes, or incorporate seasonal vegetables. Store leftover components separately for maximum freshness.
