Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Rinse the garlic scapes under cold water to remove any dirt.
  3. Trim off the tough ends and cut them into 4-6 inch pieces.
  4. In a bowl, toss the trimmed scapes with olive oil, salt, and pepper until evenly coated.
  5. Spread the scapes out on a baking sheet in a single layer.
Cooking
  1. Roast in the preheated oven for 10-15 minutes until slightly crispy and tender.
  2. Remove from oven and sprinkle with Parmesan cheese or red pepper flakes if desired.
  3. Serve immediately for the best texture and flavor.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 5-10 minutes to revive crispiness.
