Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the halved strawberries with the olive oil, balsamic vinegar (if using), and a pinch of salt. Toss gently until the strawberries are evenly coated.
  3. Arrange the strawberries in a single layer on a parchment-lined baking sheet.
Roasting
  1. Place the baking sheet in the preheated oven and roast for 15-20 minutes, stirring halfway through. They are ready when soft and slightly caramelized.
  2. Allow the strawberries to cool for a few minutes, garnish with fresh mint, and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm in a small saucepan over low heat.
