Preparation
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then slice them into rounds about ½ inch thick.
- In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
- Line a baking sheet with parchment paper and arrange the sweet potato rounds in a single layer.
Roasting
- Roast the sweet potato rounds in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and tender.
- Remove the baking sheet from the oven, sprinkle the crumbled feta on top, and drizzle with honey. Return to the oven for an additional 5 minutes.
- Garnish with fresh thyme or parsley if using before serving.
Notes
