  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the breakfast sausage until browned and crumbly. Drain excess fat if necessary, then spread the sausage evenly at the bottom of a greased 9x13-inch baking dish.
  3. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.
  4. Layer the thawed hash browns over the sausage. Pour the egg mixture over the hash browns, ensuring everything is evenly distributed.
  5. Sprinkle the shredded cheese over the top, adding any optional vegetables you desire.
  6. Bake for 45 minutes, or until the casserole is set in the center and golden brown on top. Let it cool for a few minutes before cutting into squares.

Notes

Healthier swaps include using turkey sausage or egg whites. Store leftovers in an airtight container in the refrigerator for 3 to 5 days, or freeze before baking for longer preservation. Experiment with different cheeses for a flavor upgrade.
