  • 1 pound breakfast sausage Can use spicy or mild
  • 30 ounces frozen hash browns, thawed Homemade hash browns can also be used
  • 1 cup shredded cheddar cheese Monterey Jack can be substituted for a milder flavor
  • 6 large eggs
  • 1 cup milk Half-and-half can be used for creamier consistency
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: green onions for garnish Adds flavor and color

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. Cook the sausage in a skillet over medium heat until browned, about 5-7 minutes. Break it up with a spatula as it cooks.
  3. In a large bowl, combine the eggs and milk. Whisk until combined, then add garlic powder, salt, and pepper.
  4. Layer the hash browns at the bottom of the greased baking dish. Evenly distribute the cooked sausage over the hash browns.
  5. Pour the egg mixture over everything in the baking dish, making sure it gets into every nook and cranny.
  6. Sprinkle the shredded cheese on top, giving it a generous layer.
Baking
  1. Bake in the preheated oven for about 45 minutes, or until the cheese is bubbly and golden brown.
  2. Let it sit for 5-10 minutes before serving to allow the casserole to set up nicely.

Notes

Make-ahead meals are easy with this casserole; prepare it the night before and bake it in the morning. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
