Ingredients

Main ingredients
  • 1 pound breakfast sausage, crumbled Feel free to swap for turkey sausage for a leaner option.
  • 6 large eggs Local farm-fresh eggs are a bonus.
  • 2 cups shredded cheese Choose a mix of cheddar and mozzarella for the best flavor.
  • 1 cup milk Almond or oat milk works well for a dairy-free version.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 6 cups bread cubes Stale bread works beautifully here.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare a baking dish by lightly greasing it with oil or butter.
  2. In a skillet over medium heat, cook the crumbled sausage until browned and cooked through, about 5-7 minutes.
  3. In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
  4. Layer the cooked sausage and bread cubes in the greased baking dish. Then pour the egg mixture evenly over the top, ensuring everything is well coated.
  5. Sprinkle the shredded cheese generously over the casserole, leaving some for a bubbly top.
Cooking
  1. Bake in the preheated oven for 30-40 minutes, or until the center is set and the cheese is golden and melty.
  2. Check it around the 30-minute mark.

Notes

This dish is perfect for making ahead of time, letting the flavors meld beautifully in the fridge overnight. Leftovers can be stored in an airtight container in the fridge for up to three days. To reheat, pop it in a preheated oven at 350°F until warmed through. Portions can be frozen for up to a month.
