  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup grated Parmesan cheese substitute with Pecorino Romano for a bolder flavor
  • 4 cloves garlic, minced feel free to adjust according to your garlic preference
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano or fresh if you have it on hand
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
  • Skewers (wooden or metal)

Method
 

Preparation
  1. In a bowl, combine olive oil, minced garlic, oregano, salt, and pepper. Add chicken pieces and toss to coat. Allow it to marinate for at least 15 minutes.
  2. If you're using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  3. Preheat your grill to medium-high heat.
Grilling
  1. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
  2. Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through.
  3. Sprinkle grated Parmesan cheese over the skewers during the last few minutes and allow it to melt.
  4. Remove the skewers from the grill, garnish with chopped parsley, and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or on the grill for a crispy texture.
