  • 1 pound Ground Beef (lean) Opt for lean for a healthier option.
  • 4 pieces Tortillas Flour or corn, flour tortillas are preferred.
  • 1 can Black Beans Drained and rinsed.
  • 1 cup Cheddar Cheese Shredded, for melty goodness.
  • 1/2 cup Sour Cream Mix into the beef for creaminess.
  • 1/2 cup Chipotle Sauce For flavor enhancement.
  • 2 cloves Garlic Minced.
  • 1 medium Onion Diced.
  • 1 teaspoon Cumin For seasoning.
  • 1 teaspoon Chili Powder For flavoring.
  • to taste Salt For seasoning.

Method
 

Cooking the Beef
  1. In a skillet, heat a tablespoon of oil over medium heat.
  2. Add diced onions and minced garlic, sautéing until softened.
  3. Add the ground beef, breaking it apart with a spatula until browned and cooked through.
Seasoning the Beef
  1. Stir in black beans, cumin, chili powder, and a pinch of salt.
  2. Mix well and let the flavors meld for about 5 minutes.
Preparing the Sauce
  1. In another bowl, mix the chipotle sauce with sour cream.
Wrapping the Burritos
  1. Take a tortilla, place a generous scoop of the beef mixture in the center.
  2. Sprinkle on some cheese and drizzle with the creamy chipotle sauce.
  3. Roll it tightly, tucking in the sides as you go.
Baking the Burritos
  1. Place the burritos seam-side down in a baking dish.
  2. Top them with extra chipotle sauce and a sprinkle of cheese.
  3. Bake at 375°F (190°C) for 20 minutes, or until golden and bubbly.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place them in an oven at 350°F (175°C) for about 15-20 minutes.
