  • 1.5 pounds beef stew meat
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 8 ounces mushrooms, sliced
  • 1 cup sour cream Use full-fat for best results
  • 8 ounces egg noodles Cook according to package instructions

Preparation
  1. In a slow cooker, combine the beef, onion, garlic, beef broth, Worcestershire sauce, Dijon mustard, and mushrooms.
  2. Season with salt and pepper.
  3. Cook on low for 7-8 hours or high for 3-4 hours until the beef is tender.
  4. About 30 minutes before serving, stir in the sour cream.
  5. Meanwhile, cook the egg noodles according to package instructions.
  6. Serve the beef stroganoff over the egg noodles.

Notes

Garnish with chopped fresh parsley and a squeeze of lemon. Pair with green salad or steamed veggies.
