Ingredients
  

Main Ingredients
  • 1 lb ground beef (or ground turkey) Can substitute with ground turkey.
  • 1 can black beans (drained and rinsed)
  • 1 can diced tomatoes
  • 2 cups frozen mixed vegetables (or fresh veggies)
  • 3 cups diced potatoes (fresh or frozen) If using fresh potatoes, dice them small.
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 each onion (chopped)
  • 1 packet taco seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. In a skillet, brown the ground beef and onion over medium heat until fully cooked. Drain any excess fat.
  2. In a slow cooker, combine the browned beef, black beans, diced tomatoes, frozen vegetables, diced potatoes, taco seasoning, salt, and pepper.
  3. Stir everything together until well mixed.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
  2. About 30 minutes before serving, sprinkle the cheese on top and cover until it melts.
  3. Serve warm and enjoy this cozy meal with your family!

Notes

Cool the casserole to room temperature, then transfer leftovers into airtight containers. Store in the refrigerator for up to 3–4 days or freeze for up to 2–3 months. Thaw overnight in the refrigerator before reheating.
