Preparation
- Preheat your oven to 350°F (175°C). Grease a small loaf pan or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg until well combined.
- In another bowl, combine the wet ingredients: mix pumpkin puree, brown sugar, vanilla extract, egg, and oil (or melted butter) until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently. Avoid overmixing; some lumps are okay!
- Pour half of the batter into the prepared loaf pan. Sprinkle with half of the cinnamon sugar mixture. Add the remaining batter and top with the rest of the cinnamon sugar. Use a knife to swirl gently.
Baking
- Bake for about 45 minutes, or until a toothpick comes out clean. The bread should be golden brown and spring back when lightly pressed.
- Cool the bread in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
Store leftovers in an airtight container at room temperature for up to three days or freeze for up to three months. Reheat slices in the microwave until warm.
