  • 2 cups grated zucchini (about 2 medium zucchini) Make sure to remove excess moisture from the zucchini.
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar Can substitute with brown sugar for a deeper flavor.
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon Boost if you love that snickerdoodle flavor.
  • 0.5 tsp salt
  • 0.25 cup granulated sugar (for the cinnamon sugar topping)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. Using a box grater, grate your zucchini. To remove excess moisture, lightly squeeze the grated zucchini in a towel.
  3. In a large mixing bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. In another bowl, sift together the flour, baking soda, baking powder, ground cinnamon, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until combined. Fold in the grated zucchini gently.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. In a small bowl, mix the remaining sugar and cinnamon. Sprinkle generously over the batter.
Baking
  1. Place the loaf in the oven and bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for 2-3 days. Freezes well for up to 2 months. Reheat individual slices for a few seconds in the microwave or in a toaster oven.
