Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- Using a box grater, grate your zucchini. To remove excess moisture, lightly squeeze the grated zucchini in a towel.
- In a large mixing bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
- In another bowl, sift together the flour, baking soda, baking powder, ground cinnamon, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing just until combined. Fold in the grated zucchini gently.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- In a small bowl, mix the remaining sugar and cinnamon. Sprinkle generously over the batter.
Baking
- Place the loaf in the oven and bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for 2-3 days. Freezes well for up to 2 months. Reheat individual slices for a few seconds in the microwave or in a toaster oven.
