  • 1 cup pumpkin puree (canned or fresh) Use either canned or fresh pumpkin puree.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup sour cream Can be substituted with yogurt for a lighter version.
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free baking blend.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon Toast spices briefly to enhance flavors.
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with cooking spray or butter.
  2. In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, sour cream, vegetable oil, eggs, and vanilla extract. Mix until smooth and well-combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, spices, and salt to ensure even distribution.
  4. Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Avoid overmixing.
  5. Transfer the batter to the prepared loaf pan, smoothing the top.
Baking
  1. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Storage: Wrap tightly in plastic wrap or aluminum foil and keep it in the refrigerator for up to one week. Freeze for up to three months. Reheat slices in the microwave or toaster oven for best results.
